After hack//sign, practically all mmo become real anime have OP protagonists, which makes it meaningless to include a mmo theme, afterall what is the purpose of mmo without the grind and betting your life n death on the competence of your fellow adventurers. If the protagonists are overpowered, whats the fun.
My guess is that 15 seasons/series isn’t as appealing these days, people actually want to get to the point.

You have to remember that Anime studios aren’t just targeting audiences who has read the story from other sources etc manga or novel, they would have already went bankrupt if that were the case. Character development is crucial for all story-telling, otherwise things would be confusing when the plot starts kicking in, giving people all the more reasons to criticize them.
The first third of a movie is usually characterization: characters are introduced and described. He does not need a well defined goal yet.
His goal is to find if there are another person stuck in the game like him, and to figure out what the heck is happening to the game.
The MMO setting mostly done because it is a multiplayer game, so it possible to include more people stuck into the game. Not because it mmo is grind-y.
