I've included a picture showing my Springboard (The main menu where your apps are)
As you can see, custom background, custom font, custom Wi-Fi icon, and 5 buttons on the dock at the bottom.

Incase your wondering what Jailbreaking does, it means you can change just about EVERYTHING on your iPod, and also lets you install 3rd party applications, as in, ones made by people, and not by Apple.
To get these applications, you use the program called Cydia (As you can see on my dock) which lets you pick from about 10,000 applications to download. Ranging from whole themes where it changes EVERYTHING, even icons. To simple things like a custom background. :)
It's really simple, takes 10 mins tops. All you do is put your iPod into DFU mode (Lets you see your firmware) then delete it, and import a custom firmware using iTunes by holding the shift key and clicking restore on your iPod tab. Simple.
Problem is at the moment though.. It only works on XP. (And perfectly, I might add.) - Becuase you need a program that lets your computer see the files on your iPod. - It DOES work on Vista, but if you made a mistake while installing it, it could screw over your Vista.
I've jailbroken my iPod 7 times now. All times worked perfectly. :)
(If your wondering where all my applications are, look at screenshot 2 and 3, it's another little nifty program that lets you you keep your icons on a dock built into that program. Makes the springboard a little neater. :))
