But I was wondering, since there's quite a bit of Japanese all over the place, does anyone know of any good Japanese bands/musicians/whatever? I figured you guys here would know more than just the handful of Japanese bands Americans know of.

Galneryus if you like power metal. They also sing in english in some songs.

I remember watching Hi Hi Puffy Ami Yumi o_O I totally forgot they even existed. Anyone know of anything more like metal-ish or along the lines of the GitS soundtrack? I love pretty much every song Ilaria Graziano was in in that soundtrack.

... i think we're missing an essential question here... what genre are you look for? rock? alternate? pop-rock? punk-rock? pop-punk? hardcore? post-hardcore? metal? death-metal? visual k? experimental? R&B? bossa nova? electronica?
if you want pop-based rock(s), most of those mentioned above are good.

I want some Touhou doujins similar to Silver Forest, and I also want some J-pop similar to those signed to I've. (you should know who these are, even if I don't give the full record label name.)
Also, anyone know who the Silver Forest vocalist is for this one? She's on a number of other's and she's really quite good...Ah, Kotoko, a real life loli.

OP is too vague for be to be helpful. It'd be as good as googling Japanese music. I could tell you what I like, but you might now like it, as we are indeed two different people with two different experiences.
Edit: Nevermind, I missed your second post. You like metal. This is very helpful.
For extreme metal, hoping you like this stuff because it's what I'm most knowledgable about. Try Kadenzza, Gallhammer, Blood Stain Child, Intestine Baalism, Sigh, ...
For non-extreme, Volcano is a very underrated band. So is Aphasia.
Also, if you're not one of those Deathcore hating purists, I suggest you make a stop on by to Slick Scratch's Myspace.
