I'd watch it but I'd be very cautious and not get too excited. Hanasaku Iroha had a good end, open to interpretation and ambiguous enough, but I was very satisfied with it. Another season could go many ways, so it would depend on how they did it.
Normally I'd choose P.A. Works, but since the series was done by P.A. Works, I have a hard time choosing. Probably Madhouse, Gonzo or Sunrise. Maaaaaeybe KyoAni
