You forget novels were written some 10 years ago.
It was stated in the novels and the manga that they are using the old stuff, because if you are fighting Romans there is a only a negligible difference between an F-16 and an F-4, so why not use the cheaper one.

I noticed that it's always that male characters are always looked generically natural like drawing the real thing while female characters require exaggerating variations, customization etc. Gate is no exception.
