Because not all the characters are into yuri. The creators of the books and characters wanted to have a variety of female warriors. Men even actually exist the in the QB world, but most of them aren't important (but I mean Cattleya, for example, is clearly straight since she's married to a man).
It's hard to tell sometimes.
Funikura was where the ecchi really got pushed beyond yuri stuff with his full blown tentacle rape complete with "healing liquid cumshots" but it's all but disappeared along with most anything similar.

We've been waiting to see the Swamp Witch appear for a long time... we speculated that it'd happen eventually but actually seeing her show herself and now get animated is pretty cool.
