Battle wise or anime wise?
As witches they have magic shields which are a must, wicked mobility, able to hover like a chopper or fly stright like a plane, and can carry enough firepower to rival aircraft of their technological level plus a few have magical attacks that while limited in use pack a great punch.
Anime wise? Besides the obvious fan-service plus it is more expressive and character oriented since you don't have to continually switch between cockpit shots and external shots every two seconds.
But of course this only makes sense in anime.
Whole Airplanes?
We've seen those since the days of the Red Baron..
Maybe it's because Strike Witches would have been an interesting depiction of Air Combat and such, but we already know what Gonzo and AIC targeted for the anime series.. Loli Pantsu Lovers no more no less..
Nevertheless, somehow I prefer an Alter Lynette.
(Me is not really an Action Figure fan)
