There's no actual 3d hand motions involved, all they've done is simulated regular mouse movements with the kinect.
There's no actual 3d interaction with the game involved there - you would get the exact same result when using a mouse, which you'd know if you've ever played one of those games.
If you pay attention, the hand in the game is always right up against the body, and whilst the hand in the air matches the general directional movement, it isn't actually controlling the hand's movement in all three dimensions, let alone angle/tilt/twist etc.
The second hand changing the camera angle doesn't count either, as it's the same as holding down a mouse button and dragging to change the view.
Real or pseudo-3d motion aside, it still looks like fun to at least simulate the hand motions at the same time.
