Wow...... too much information to process. I have to sadly say I liked eating sushi over here more than in Japan. I really don't get all the traditions that you have to do at the sushi-ya, and almost seeing what type of fish they used almost make me puke... =(

Well that picture explains where that fish smell is coming from...
Actually, if you smell fish when entering a sushi bar they are using fresh (ie non sterile) fish for their sushi (ie bad).
To kill parasites and germs, the sushi-fish must be frozen for three days (or deep DEEP frozen for 8 hours), which also removes the fish smell.

I've made sushi several times without freezing the fish before that - and I'm a big eater. Still never got any indigestion from it.
I know all sushi in the US MUST be flash frozen for the reason outlined by Norr. So, whether on the wharf in SF or in the middle of Colorado, it's been frozen at some point.
Did you check for intestinal parasites?
Most of the fish used for sushi is flash frozen on the boat, there's no way they can ply waters more than a few days away otherwise.
Saw it before going to a trip in Japan on 2007...
