Despite everyone making fun of her, she can really screw you up if you're not careful on Lunatic. On Normal/Hard she's pretty easy.
Her first card, you mean Ice Sign 「Icicle Fall」?
That Spell card is so extremely easy to dodge and boring...
The Hard/Lunatic version Hail Sign 「Hailstorm」 is much more interesting. Unless you meant her first non spell, which IMO is harder.

Once you learn the Stages they're really not that difficult.
The only thing that can sometimes kill you are those damn books that randomly shoot green bullets in Stage 4 just before Koakuma.
As for the bosses.
China is pretty easy until her last two spellcards, just like you said.
Funny thing is I think her Colorful Sign 「Colorful Rain」 on Normal is harder than her Colorful Sign 「Colorful Light Chaotic Dance」 on Hard, at least for me. The last one is just PANIC MODE + improvise and hope for the best.
Patchy, it depends. If you're playing Reimu A you'll get the easiest Spellcards to dodge IMO. Reimu B has the hardest. Her non spells are pathetically easy.

Yep, that's what she does best. She's a raping machine and she will rape you hard. I think she may even be as hard as Remi herself.
For me her first non spell and her final Spell card are the worst.
Although I really like dodging her Illusion Ghost 「Jack the Ludo Bile」 and Illusion World 「The World」(ZA WARUUUUUDOOOOO) on Hard/Lunatic.
Those Spellcards are awesome, the last one is a pain.
