Major Kusanagi was most certainly human. She did have an entirely cybernetic body, but her brain was still normal. Granted, almost everyone had cyberization done to their brains so they could interface with the world. It is this part that can be hacked or used to read/write data to the actual brain. This is sometimes called the Shell.
In the movie, they start by showing a body being formed from nothing. This is not the major, but just shows a cyborg body being made.
If you follow the original manga for it, you find that near the end, she abandoned her last human part, her brain to merge with an AI and become something else. The new her then had bodies all around the world that she could “upload” herself into. These were all her and only one could exist at the same time. However, she does run into a different variation of herself.

I know I don’t post much, but I have to say that the Fruits Basket manga had me pretty emotionally involved. For the TV series, I would agree with you HouseLife. It’s been a while, but some parts I remember would be the point where Kyo was preparing to be taken away to the room he would never leave. The place his grandfather lived his whole life in. The end of the series, or at least what happened to the curse made me cry out of joy and sadness. I actually felt for Akito by that time.
