It's because they're ending it when fan's know there is still more material for making an anime. We have the Gun Gale Online arc, the Return to ALfheim Online arc, and the Project Alicization arc which they can animate.

How about tapping into the backlog of already published novels from Juuni Kokki (Record of Twelve Kingdoms) by Fuyumi Ono? This is a quality series begging to be completely animated.
